Got an early start this morning with some hot wings.

Made up the egg wash and then the hot breading and prepped my hot wings.

Placed them in the fridge for about an hour so the breading can set up before I cook them.
Fired up a half chimney of lump charcoal and waited for it to get right.

While the charcoal was getting right, I made up my hot sauce.

This cook was done in my Weber Jumbo Joe with the Mini Vortex holding the charcoal.

I used a piece of hickory for the smoke and just cooked my hot wings until they were done.

Just off the kettle.

Wonderful looking wings!
What's in the "hot breading?
Wow those really look good!
Tried breading on wings with the vertex but not an egg wash before it....yet. Beauty looking food.
I'm with
@MrHoss! Haven't tried an egg wash on vortex wings...yet.
@Old Dave Those look amazing and give an even more deep fried appearance than using just flour.
I'm usually not a fan of breaded wings, but those look pretty d@mn good, Dave ! ! !

Mr Jack Fate, this is the breading recipe I use for this treat. Will bread about 20-25 pieces.
1/2 cup milk
1 egg
1/2 cup flour
1/2 cup cornmeal
1 tsp white pepper
1 tsp fresh ground black pepper
2 tsp garlic powder
2 tsp onion powder
2 tsp ground cayenne pepper (or less if you can't stand the heat)
Now, as a chili-head, I double the last 5 ingredients in the recipe.
Hot Sauce
1 cup Louisiana hot sauce
1/4 stick melted butter
1/8 cup honey
1/8 cup Rooster
2 TBL Tabasco
2 tsp ground cayenne pepper

+1, totally agree
Pretty work
I tried your recipe, (minus some of the chile, my family can't handle) and it is a winner. Crispy outside and lots of flavor.
Dave; Isn't that the way Col Sanders started ??? ;D SJ
Those look amazing!

Never mind I see rooster is a spice
Rooster sauce is Sriracha Hot Chili Sauce.
Picture of a big rooster on each bottle. Very good stuff.

Gee this has gotten quite complicated.
Googled rooster sauce & de Mars Rooster sauce came up. Called all area groceries to no avail. Wife went online to see if there was viable option to this sauce & couldn't find anything.
Ate wings last night old recipe.
Will be on lookout for Sriracha now
Cheers
I have got to get a Vortex! looks great

Did this recipe with reduced hot ingredients. As I suspected was needed for our tolerance. Still waaaaaay to hot to enjoy by me but will say that it is a multiple dimension of heat. So hot freaks enjoy & I do think you will enjoy .
