Getting going now. On the menu tonight...stuffed mushroom, CI fried mini red potatoes, buttermilk brined chicken thighs and apple bombs.

First on are my cremeni mushroom caps. They get left till moisture pools in them:

A mix of onion, mushroom stems, garlic and some garlic Italian dry sausage were fried them mixed with some 3 yr old white cheddar. This was stuffed in the mushroom caps and partway through the main cook I finished them:

OK, I started off easy with a three-banger......chicken thighs, brats & a couple tater packets on 'Lil Red, the "E" Code Blackie & a newer 18"......however, I'm out of developer & stop bath, so pics will come later............  :o

Great looking cooks fellas! Here's my modest first entry for the 18 cooking challenge.

For the first time cooking on it since I got this grill (January 2014) I give you giant chicken breasts on my Brave.

Tonight's hit cooker is from 1970. This is the the same exact Copper Mist 18 that is in the gallery! Love this grill and I thought it was time to put fire to it once again.

This is a teaser cook on the JJ - meaning it was not a complete meal - That's still on it's way later in the week. @MrHoss that is one good looking meal. @dazzo - tri-trip works every day of the week in my book. Great cooks.

This is my split chicken rolling along nicely. Turned out great - it was paired with a dilly potato and green bean salad.

Dinner last night consisted of left over steak and chicken thighs plus fresh corn, green beans and potatoes.

Some simply amazing cooks so far.  Inspirational.

I am cooking for myself these days, so an 18.5 is just the ticket.  My patent pending 49er gets the call:

Decided on green chile burger as the main player.  1/2 lb of freshly ground 80/20, seasoned liberally with @jamesnomore "green chile magic" and then wrapped with bacon:

Cooking indirect with lump.  The pan contains some green chile stew that I made up over the weekend.

We used Weber's coffee rub on the chicken, it was tasty for sure!   Things that i learned was timing of when to put things on and coal replacement for extended cooks, all in all i had fun and pushed my limits for sure!

Here is mine and AZ_K_GURL'S 18 cook up. We done an apple pie, some 'turds, stuffed pork loin, redskin mashed potatoes and broccoli.

Used an 18 bud light logo kettle  that I acquired in a trade from argentflame. This is the first time I have fired it up. So onwards with the cook.

The set up. The performer gets to play supporting role today. The 18 gets to have all the fun.

I did not have a 18 that I wanted to get dirty or could easily get to so I grabbed a cheap one on craigslist.  I borrowed a receipe from Alton Brown for some Grilled Cheese Sandwiches. I also made some cookies on small cast iron pans.

This was actually the first time I ever cooked on an 18. It is significantly smaller than the 26 I am used to but it got the job done.

Sprayed the inside of the foil muffin tins, made a nest of prosciutto and filled with the cheesy spinach dip , baked until the prosciutto was crispy.

In the meantime I took the ground beef and mixed in some pasta sauce and some par boiled Rigatoni . To half I added some roasted red and green pepper and some spicy Italian sausage I had grilled earlier.

Second ....  A BIG Happy "LX" Birthday to @1buckie on Saturday.  You are an inspiration to all of us consumers of large amounts of bacon.  8) ;D ;)

I love cooking on my 18s.  I also love doing butts on my go-to butt cooker .... My 18" Outrider.  Got it going. 

Removed an 8 lb butt after 8 hours .... Hot-n-Fast!
