Breakfast fatty for the week

Decided to make some smoky goodness for breakfast over the next couple of weeks.  A breakfast fatty seemed in order.

The mix:  Scrambled eggs, roasted Hatch green chilie, cubed red potatoes, diced onion, diced garlic, mexican blend cheese, prosciutto ham, and spices.  Stuffed it in the PVC and put it in the fridge to firm up:



Standard bacon weave:



1 LB of regular Jimmy Dean rolled flat:



Time to practice those sushi skills:



Donna had some fuel left over from the night before, so she got the call of duty.  She is my first redhead, and now I can see what all the fuss is about.  I love the fact that she gets darker when she heats up!



Indirect with Cherry wood smoke:



The payoff:



Sealed up some slices using the vacuum sealer for later in the week.  Just reheat and they are ready to go.  I like to put them on a toasted english muffin, with an over easy egg on top.  My cardiologist does not approve....

I can almost taste the fatty McMuffin.  That sounds wrong on so many levels.

Excellent.  I love breakfast fatties.

How do you reheat yours?  I like to heat a tablspoon of EVOO on my cast iron skillet or griddle and get a good sear on both sides of the slice.  It gives it a nice crispy crunch around the edges.   8)

Yes indeed.  I probably should be making some kind of green smoothie for breakfast, however, this is so much more satisfying.  Toasted english muffin, breakfast fatty, egg sunny side up:

I would suggest using that Vita-Mix to make some Hollandaise sauce and make the best fricken Benedict ever!!!

OoPEZoO - you got it.  I throw it in the microwave for a minute to get the internal temp up, and then into the skillet for some "crunch".  Then I use the same nonstick skillet to cook the eggs.  Only one dirty dish!
