Rub trade cook

Traded rubs (no homo) with jamesnomore.

This rub has a sweet kick, should go good with pork. Wood is peach chunks.



Rubbed a couple trimmed spares last night. Went fairly light on the rub, just to dip our toes in the pool.  Tossed on the Mutt Performer @ 11:00 CST



Will also do up a dozen or so turds dusted with the same rub, cream cheese, and a slice of apple.

This is the 1st time I have cooked with all the coal piled to one side. DONT LIKE IT. Temp is around 300 with the vent 1/2 open. Burn is fairly quick and a little unstable. We shall see if the meat turns out.

Might be a good place to try 1/3 bottom vent & pinch down the top vent a bit***

Jimmy, did you start with too much lit coal? It's hard to get temps down of you do.

Possibly or I used too many lit coals for the minion. I did get the temps down to 260/275 ish.  Either way, I think the bank method is not for me.

Ribs are off. 2-1-1 sorta.

jamesnomore was also kind enough to send a bottle of what I presume is homemade sauce.

Sauced one rack and the other is dry.

Overcooked slightly. Real nice flavor in the rub and sauce. Should have went heavier with the initial rub.



Turds are still burning. My sister is on her way over. She has not had any turds so I am looking to convert.

Nice run Jimmy! I used the rub you sent me for a couple of fatties, 1 a Bacon Explosion and the other stuffed with some leftover pulled pork  :o, no pics of the prep or the cook but here's a nice shot all cut and ready. Both were amazing and didn't last long.

I used the snake 2 bottom row 1 top row with some hickory chunks.
