What kind of apples are those?

Danny, the 2nd pic (down) is coals under the Dutch oven, then the lid placed on, more coals on the lid with the lip of the lid keeping them from spilling off...

There's chart published by the Boy Scouts that tells how many coals above & below to use for all various temps & types of cooks
I'll look it up, if you need......

I cooked some steaks and with the left over coals I shoveled them under and onto the Dutch oven.  Since they were dyeing, I didn't use the official coal count.

what do you put on the charcoal grate to hold the charcoal and the dutch oven?

When I was cutting the bottom out of the tamale pot for the smokey joe mini wsm mod, I had a disc of alum left over.  I simply place the coals on the disc and the DO over the coals.
