I got a WSM for Christmas and today I had my second cook. Baby back ribs.

Good little smoker. Holds temp well. I like that I don't use extra charcoal also.

How do you check if the ribs are ready? I usually do the bend test but i would imagine it might be difficult with them rolled like that.

Do you go on temp?
