Apple-stuffed pork loin on the rotis

Found a bargain this week:  $1.50/lb on whole pork loin.  So I made thick cut chops yesterday, and thought I'd try stuffing a section of loin today (HT:  Bman).  Made a stuffing out of sweated shallots and a stalk of diced celery, then diced apple, finished with some sweet vermouth and fine breadcrumbs.  Salt and pepper on the meat, then rolled it all up and tied on two pieces of bacon for good measure.  My daughter had the fun job of salting the outside of the meat while it turned on the rotisserie. 



Plated up with roasted sweetcorn fresh off the corn ring (HT:  Duke).

Sorry to see you had to have that for dinner....  :)  Nice job on the roll cut!
The only thing that would have made this post better?  Using (and taking pics) of Peaspurple rotisserie.  lol
I've always had gas...  And now a bunch of kettles because of this place.  Thanks!

I need to practice rolling my own. Last time I tried it was an abysmal failure.
