WSM or kettle?,
Doing my second meatloaf and another  butt on the smoker this weekend. Just wondering if i should do my first rib roast onn the smoker or performeer


Why is the rum always gone

I wouldnt slow cook a p rib roast , i have always indirect high heat pull it when its to your liking .  Dont want to loose the nice juices in there !

Oh , i did a beef tenderloin a few weeks ago that way , there wasnt even time to take pics :D yummy !

I do my rib roasts on the WSM, but at higher heat than slow smoking (like oven temps).  I like the way it is centered in the chamber away from any potential hot spots and because I use a stoker it is just like oven cooking.

That being said, you could ABSOLUTELY do one on a kettle. It would be awesome either way.

I cant seem to keep my 22 wsm above 260 for too long without having to add coals , maybe take the pan out would help ?

How are you measuring the temp Sparky?

I use an empty pan with plenty of lit fuel. No problem going well above 300.
