No big write up just another chicken. Salt pepper and just a touch of the poultry rub from the ribs. Baked potatos and some fresh green beans cooked with butter and garlic in the cast iron pan while the chicken rested.

Looks good. You are right, chicken was made to be cooked in a kettle.

That looks great! I just had the last of the Huli-Huli chicken I made last week for lunch. Still good!

Do you put any smoking wood on the coals when you make something like this? Since you're close to all of those orchards, you could probably get some apple and peach just for asking. If you've got any wild cherry in the neighborhood, watch for branches that come down in storms. A chunk or two of any of those can take that chicken to the next level.

I used two small chunks of apple when I first put the chicken on. So far apple is all I have tried smoking with.
