Surf and Surf on the Kamado Joe Jr

Continuing with the soapstone theme......

With the time change it's definitely dark by the time I can fire up a grill, but that won't stop me!  Last night was swordfish steaks and sea scallops seared in olive oil and kerrygold butter on a 450F - 500F soapstone.  Awesome crust and very tasty!  Sides were Kellee's cucumber salad, cauliflower tots and of course a little heat from our garden cayenne peppers (last pick of these till next year).

This soapstone can of course be used with a smokey joe, jumbo joe, gasser - whatever you grill on.  It's really fun to use and yields a great crust on seafood; still getting up the courage to try a filet mignon with this method.

Just freaking go for it with the filets on the soapstone!  It will be good, I’m sure.

@AZ2FL you’ve had my filets on a Weber Traveler and they were pretty good or so I was told lol, thinking they would be good on a soapstone as well.  Going for it soon.
