Mold on smoked cheese?

I found some cheese I cold smoked last December I forgot about in the back of the fridge. It's been vacuum sealed, but it looks like there might be mold on it? Are the white spots mold? Can I just cut the mold off, or is the whole block bad?

Well a freezer might have been a better cold storage option.   Hard to say.  If it is, and it's a soft cheese, the entire block is surely inoculated.  A hard cheese, maybe a chance to whittle your way to something.  I would not serve it to anyone.  How good is your health insurance?

It can affect the texture of certain cheeses once defrosted.  Best to enjoy the cheese before getting to the point of wondering if you should freeze it or not.
