What’s your weeknight fav
« on: February 13, 2021, 02:44:53 PM »
Been doing a lot of my SF, and even the kettle. This Thursday I put on a brisket at 11:00 pm. It was done, tender when probed at 1 pm Friday. Wrapped in foil at 155 when stalled. Turned decent.

Dang your  brisket looks good,  nice looking smoke ring ...Sweet school night cook.

My work night cooks are grilled chicken, steak, burgers or pork chops. Something that can be grilled in 10-20 minutes.

Cheers

I’d like to learn how to do H&F ribs. Do you have a wkc link explaining your method?  thanks

I like to smoke brisket HF, the only way to go.

Cheers

King...you've got the brisket bug. Well done again. The mother of all bbq proteins. Challenging but rewarding to cook, especially when you get it right!

I looked and couldn’t find it but I refined my method using tips from vwengguy on here.

Basically you start a full chimney of charcoal and bank it on one side of a kettle and place your ribs opposite. Cook for one hour with all vents open. Then wrap them in foil with whatever you like or nothing and put them back on the grill for another hour.  Remove from foil and glaze for 15 minutes and they come out perfect every time. Super easy.

I think Harry Soo did a side by side of H&F vs L&S brisket.  It was enlightening.

I apologize, I had to google Harry Soo. I try not to go down the YouTube rabbit hole if I can help it.

I’ll have to search for the Harry soo HF vs  LS brisket cooking method video.
