Saturday Tri Tip,

Got some discount choice tritip from the local Kroger, frys. Coffee rubbed, hickory, for another 45 minutes, all vents wide open. Tried some white bbq sauce. Really good stuff.

It's actually a copper, but it felt good to use a kettle again after pelleting myself half to death

 Nice looking tri-tip on the kettle. I've used your coffee rub recipe on my tri-tip a few months ago. It's a great compliment to the beefy flavor of TT.

Are your French fries from scratch?

Coffee?  Sauce?  Heresy I say!

The amazing cut of tri tip deserves a simple rub of salt, pepper, garlic and a little parsley.  Do yourself a favor and order some traditional tri tip seasoning from Suzie Q's in Santa Maria, CA.  It's perfect and works awesome on lots of other dishes as well.

Grill all sides over oak to sear, slide to indirect and cook until 135 in the middle.  Rest for 10 minutes in foil, slice against the grain and enjoy California's greatest contribution to American cuisine.  Serve with ranch beans, fresh salad and grilled bread with butter for traditional CA style.  If you must sauce your meat, it's tomato based salsa.

@old CWO say only salt n parsley, then say Suizie Q's , I've done it all different ways, my personal favorite is the heretical coffee/herb rub, medium rare.

Just giving a ribbing; as always it's taster's choice. There's no reason to stay in a box but honoring the  traditional American regional BBQ styles is fun too.  For example, after my years in Eastern NC there is no way I could eat pulled pork with tomato based sauce.  It just seems wrong.

Suzie Q's is comprised of salt, pepper, garlic and parsley.  While a little pricey, the ratios of each have a good balance and it works well on a lot of dishes most especially Santa Maria tri tip.

You know what's funny? That Sant Maria seasoning is known to be the "right/best type to go with tri tip. I've been doing tritip for years and have never tried the SM seasoning. So you now have me wanting to try it. Lol I just did some vinegar at sauce with the last pork shoulder I did and it was super good.
