Hi,

Looking for a quality boning knife that doesn't break the bank. Mostly for deboning chicken, and trimming beef/pork meat and fat

All recommendations appreciated!

Victronox Fibrox. Hits sweet spot for function and value. Many styles to choose from. 5 or 6 inch with flexible blade. Been working for me.

Ditto.

I got this one, base on the recommendation from another forum, and I have been very happy with it.
