Sausage!
« on: December 30, 2020, 01:26:09 PM »
Militello annual sausage making.   A family tradition going on for 80+years[emoji634][emoji631].  My son needs to learn!

Twenty pounds this year.  Half hot Italian and half sweet.

We decided to “automate” with the kitchen aid grinder due to the quantity.  We usually used my grandfather’s Enterprise hand grinder.

Great day with my dad!

No.   That’s my dad.  I’m in black.

They are great!  Michael gave me some hot and sweet last year and they are spectacular. Way better than store bought.

My family makes sausage as well; potatiskorv to be precise. How do you like that kitchenaid sausage stuffer? I hated it. We upgraded to a 5# stainless steel one from Cabelas and it goes so much faster.

The kitchen aid stuffer is painfully slow.  Agreed.  It’s also a pain to feed the meat into a small opening.  I can live with it since we might make 2 big batches a year.  Manual stuffing was easier imho.

It would be fun to try grinding a custom blend of ground beef for smash burgers.

Funny you should say that.  I have a brisket flat I was going to cube up to do just that.   I saved my trimmings from the last ribeye roast I cooked too.  Nothing gets wasted.
