Reverse sear Pork Tenderloins and a sandwich or two

Good price on PTL. Had to have em.

Brined and then rubbed with my Tex-Mex rub. A chunk of pecan for some smoke.


Finished with a quick sear.


This made a great supper with grilled asparagus and rolls.


But here is where the fun begins. At least for me. Cause I love a great sandwich.
All the leftover pork got slices thin on my P.O.S. slicer

Toasted some wheat sub rolls.


Some Dukes and some fermented green chile sauce.


The sliced meat


smoked cheddar


Of course some grilled bacon


And it's time to eat.


And that's it.
Just another sandwich.

Wow!  Fermented green chili and smoked cheddar must have really taken it to another level. Looks incredible.

I've been fermenting chile sauce for a few years. Always from the garden. I bought a new (used) Ninja blender to replace my 1960's Osterizer. Had to give it a whirl so I bought a pound of Anahiem peppers. Fermented and sauced...Friggin delicious. Zero heat. WTF. Oh well the Ninja works great!
