High Heat Brisket and Butcher Paper?

Hey everyone, I got the last brisket in town today at the local butcher's shop. I have had good luck with using the high heat method but I also just got some pink butcher paper that I'd like to try. This will be on Friday and I don't want to screw up that expensive piece of beef!

Here's my question: Is the high heat method and butcher paper a no go? I understand paper will ignite over 400 degrees or so and the high heat method will get close to that. Whatcha think? Is the foiled water bowl enough to protect it?

Hi.  I'd suggest high heat till the wrap then dial it back to 300ish once wrapped.  You'll still get done quickly.

@michaelmilitello Thanks for the suggestion. You were exactly right and it went great. My first time with the butcher paper and it worked great!
