Let me know if you move to Missouri. I could use a friend with a dedicated meat processing and marinading shop!  Nice!

Thanks!  Will do.    I actually have a number of family members who come straight here from the grocery store, to slice and/or vac pack meats and such.

Thanks.  It was a glorious day.  Almost all challenges were conquered and all guest appetites were slain.

More pics to follow, but here is my favorite one.

Thanks.   It was absolutely incredibly awesome.   I was wigging hard.  In the weeds all day.  Running around like a mad man.  It was great.

Hahhah, I look ragged and burnt in that last photo.   That was about 3/4'ers the way through the cooking.

Awesome. Looks like everyone enjoyed themselves. Great looking spread of food!

Man, that's a lot of work, and what a spread! Looks like you had a happy birthday, and I hope you had a crew to help clean up! WOW!!
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

Awesome pics, you look pretty happy and calm to me

Thanks!  The only real thing close to "complaints" were comments like  "I now know what a meat coma is" or "So, this is meat sweats".  ;D
