I picked a 14 lb prime packer and I am going to try
Hot and fast on my 22WSM
I can't stop lovin my Weber!!!
2-22 WSM, 22.5 gold, 22.5 MT code EE Red Head ,22.5 AH in Green ,18 silver , Green SSP code EI,Weber Ranch,mini WSM black,4-smokey joes black, lime, copper, crimson Sjg  IQ120 electric 22.5 silver economy 2004..that makes 15. I know WEBERITIS !!

I've done a few like this....

400 for 2 hours, wrap in foil and finish at 275-300 for about 2 hours more. Comes out great!

My last one was 15lbs and took just a hair over 4 hours from start to finish. Probed liked butter around 208-209.

Cool. Take pics or video along the way. I still have NOT done hot and fast for ribs, butt, or brisket. I love brisket but 12-14 hours is a bit much for me right now.

Doing almost the same. 2 h low temp smoking and then 3-3,5 h in the Dutch oven by 350f (with some or apple juice). Perfect result!
