How I set my Smokey Joe for smoking using the entire grate.

Here's how I set up my Weber Smokey Joe for smoking using all of the cooking grate and making absolutely no vent adjustments throughout the cook, enjoy.

I start by setting up my charcoal like a snake. Given its such a small distance from the charcoal grate to the cooking grate this works well.

I then light 6 briquettes and add them to one side of the charcoal to act like a fuse for the rest of the charcoal.
I know that if I start 6 coals I can hit a smoking range of 225° to 275° without making vent adjustments.

I then add the holder for the deflector.

I wrap my deflector with foil for an easy clean up.

Next I put in place the cooking grate and thermometer. I use the Thermoworks Smoke, I highly recommend it.

Once my  fire is burning clean, the grill is in smoking range and I place my food in the grill, now we wait.

I hope this is helpful to anybody looking to smoke food with a smaller cooker.

Slick setup! What exactly is the deflector holder? Looks to fit prefect in there.
