I bet the Q is a perfect grill for those chops
It's actually really fun to cook on.  We do burgers, steaks, chops, chicken and various fish filets on it.  Went basic kosher salt and black pepper with these and I'd be hard pressed to remember a better chop.

Done.  Smoked it until it hit 145.  Now I will let it rest in the fridge and cut it on Friday

I cooked this for about 2 hrs (about 1 hr in the photo) I will have to try a truly low n slow 6 hr cook someday
