Put my coals out when I stirred them around or something, had to add more coal at 4 am. Pulled the pork off at noon, the sun had my screen on the digital thermometer all black, so I just pulled it. Turned out pretty good, I could have wrapped it sooner.

First pic is the chuck roast. Gonna warm it up for dinner, other pics are the pork

Got a slow and sear for my birthday. First time firing it up so I went all out with some local grass fed, grain finished boneless ribeye. I was satisfied. Also picked up some beef short ribs for tomorrow's slow action.

Went to Costco for some Baby Backs and they now carry bone in short ribs. Did want to get them but had the room in the 22 WSM so why not.

beef short ribs for the first time with the slow n sear.

Update: 1:30 they are looking tender lol. Temp is at 185. So I wrapped them up.



Update: 3:00 Slow and sear is awesome. Felt like these cooked themselves.
