I call this the chimichanga burger. A hollowed out patty seasoned with taco seasoning, filled with onions, jalapeños, black bean and corn salsa and cheese sauce then wrapped in bacon and a flour tortilla. Pretty amazing.

Totally cheating tonight. Ribs sounded awesome but since I had to work until four they were out of the question...until I found these at the regional chain grocery store. Pre -cooked ribs ftw. Added some Stubbs Sticky Sweet sauce and they were amazing. Instead of the 2,2,1 method, they were a 0,0,1 cook.

Toast on the bottom, then your choice of meat, cheese sauce, then fries on top. Most restaurants have many choices of meat like Buffalo chicken, bacon, pork tenderloin and the original, hamburger. Super good.

They were delicious! Family approved of them a repeat cook. I was not able to dry the skins out over nite, and did not use the red pepper flakes (kids). Sill had kick and skin was a good texture. I also did not have the rub he used. Just salt/pepper/garlic plus a little onion powder and paprika. Plan to do these in the wsm for a dinner party (post covid).
