Sorry for the fuzzy picture, had some Zummos boudain and spicy Conecuh sausage tonight.


The oldest daughters not crazy about boudain but my youngest loves the stuff and since she was actually home and not on a date tonight we decided to cook some up, really good stuff. If you've never had it its a lot like dirty rice stuffed in a sausage casing. You have to watch it or it will pop and go everywhere. Indirect works well with just a touch off direct to crisp up the casing. It also takes on smoke flavor really well. With the Zummos you can get a idea of how fast its cooking by watching the ends, the rice mix will start to expand and pooch out as it heats up.

Looks interesting. I don't think I ever saw that in a store around here.

Like me some Boudain.  Our local Cajun place does not have it.   >:(

What kind of grill is that sausage cooking on ?  Do we need to have a meeting ? :o

That's my new (to me) Hasty Bake Suburban, the newest part of my all American, all retro bbqs. Don't worry there's a few Webers in there as well.
