First try homemade bacon

Used the amazing ribs.com recipe with maple syrup.  Five day cure. 

Smoked @225  on my EE red with hickory to IT of 145. 

Our dog, McGee, was digging the smell. 



As expected, it was well worth the effort.   Perfect blend of smoke, sweet, and salty. 

Consumed before pictures.

That's really cool. It looks delicious. I'm guessing it was a lot better than store bought. How did you slice it?

I let it cool to 80 degrees then put it in the fridge.  After a few hours I sliced it with my carving knife.  It's a 12 inch GFS special.

Lets just say I have acquired a few Kettles.  Big and small.   Vintage and New...  Some say I have a problem.  I find the Kettle, buy the Kettle, USE the Kettle...No problem...
