Rainy Day Ribs

It was a rainy day today in Chicagoland, though things cleared up in the afternoon. Made some baby backs and a homemade honey jalapeño BBQ sauce. Used the 3-2-1 method with these. How many of you use the same method? Any strong feelings for or against it?

Those look delicious. I usually use my WSM @ 225 to 250, no wrapping. But if I use one or two of my kettles, the 3-2-1 method works. I usually just cook in the rain, will start to use my umbrella now, thanks.

I don’t own anything but kettles and I don’t 3-2-1. Just a personal preference. Those look great.

I just go 3-2 and then I am done.  Never make it to the 1 lol!  Works fine for me.

I usually do the same, followed by about 15 minutes open with some sauce if desired.

For baby backs I like to do a 2-2-1ish. I pull them when the meats starts to pull away from the bone easily. Sauce that last hour... I think the bigger Q, what do you put in your foil wrap?  Last time I melted butter, mixed with brown sugar and made a sort of glaze, man was that GOOD!

@ste6168 For this cook, I did apple juice. I've done beer in the past too. Not sure how much of a difference it makes, though your melted butter/brown sugar mix sounds good!

I've always thought that baby backs only take 3-5 hours until they are done. Wouldn't 6 hours be a bit long? I thought the 321 method was for spares. Thanks in advance!
