Tri tip on the menu

My slow n sear arrived sooner than expected, this should up my tri tip game tonight. Super excited about this cook tonight.
The tri tip was cut a bit different than in use too, but you gotta go with what Costco brings in.

So I put the unlit Royal Oak briquettes in the SnS, put approx. 20 lit coals in there with a mess of hickory pellets in the unlit.  5:15pm start time.  Internal was 36, 5:45pm internal was 87.  Grill temp avg. 250-270.

6:15pm-  internal 111, grill 300.  Letting grill climb, so I can sear it. Reverse sear will be good. Plan to take off at 130 internal, let rest until temp drops & grill is good and hot.  Will dry surface of meat and sear about a min per side until good color/crust forms

Ok.  The phone pics don't do it justice. I made a nice board sauce and everyone ate all of it. Clean platers all around.
