Early birthday dinner prime rib

With all the talk of prime rib I had to make one myself. It just so happens to be my birthday today so I made dinner for my family and parents yesterday for an early birthday dinner. It was definitely a challenge as I had to bring all the cooking elements myself. I was able to fit 2 22's, my wife and my 3 kids in my Honda Odyssey along with any accessories. This is what the van looked like filled (minus kids since I took the picture this morning).


"Prime" rib was on sale at a local butcher for only $8.95/pound.







I used the recipe off of amazing ribs. I dry brined the night before and then applied the cow crust about an hour before putting on the grill.



I also grilled hasselback potatoes and bacon wrapped asparagus.



Everything turned out great and we had enough to feed 9 adults with some left over. Total cook time for the prime rib was just under 3 hours at 225 degrees. Once everything was on it went pretty smooth and I would definitely do this recipe again.

Interesting that the label on the prime rib above says "prime rib must be at room temperature prior to cooking."  @mhiszem, you said you used Amazing Ribs recipe which specifically says to go straight from fridge to grill. Which way did you do it?

I'm doing a 4.5# boneless  tomorrow using same recipe from Amazing Ribs.

I ignored the recipe from the butcher.  I went straight from the fridge to the grill based on the notes on amazing rib website. When I put the probe in the beef it was around 40 degrees.

Great job! I think the "room temperature" caveat probably applies for the sear then finish process, and not for the reverse sear.

No, not really. It's all to do with cook time in recipes. For most here that wouldn't be an issue since we tend to cook to temperature. Alas many people will read a recipe that says cook in a 350 oven for 45 min and do just that.
