I have experimented with brisket about 5 times and finally got a method that turned out exactly how I wanted.

This one done on my new Charcoal Summit.

Coated in yellow mustard and rubbed with salt and pepper. Smoked low and slow and wrapped in pink butcher paper at the end. Learned to pick up the meat with towels to not break up the bark.

Have you tried to use plain cotton gloves with a latex glove over it. Learned that trick from the how to BBQ right YouTube channel and it is much easier and better than using towels. I would highly recommend it.

Also, the brisket looks fantastic.

I did the whole packer brisket with this one. Didn’t do burnt ends, but that is definitely next on my list.
