Blackened tilapia, taters, ad cornbread

Nice day to fire up the 26 for some grub. Taters and cornbread in the plans.

Grilling buddy - Kally is the sweetest dog I have ever had - 8 years old and got her when she was one from a rescue

Cornbread and taters in CI skillets
Fired up the side burner on the genesis for the blackened tilapia

I love the side burner - you can really crank it up.

Taters were good-salt, pepper, onion , garlic, and rosemary.

Cornbread - I have cooked cornbread many times but I think I nailed it on this pan


Fun cook, and used both kettle and Gasser. Also used three CI Skillets - two 12 in and one 10 in.

That all looks great! It pays to have an extensive CI collection. ;)

Did you need to rotate the cornbread and spuds to get them to cook evenly?

Yes - I did rotate them a couple of times.
The trick to getting a good crust on the cornbread is to preheat the skillet before adding the batter. The kettle was running around 400 C - just check with a toothpick in the center to make sure it is done.
I have 3 12 in skillets due to a mishap in ordering one a few years ago. Got the package and it was one package of three. Online retailer didn't want to pay to ship back - they are heavy. I also have a 15 skillet as well. Will do a cook with that one soon.

Here is the recipe I followed. For the 12 in skillet I doubled the ingredients. I like to use sour cream - gives the bread a nice flavor and keeps it moist.
