Salsa Verde

Made a roti chicken and decided to use it for enchiladas.  My wife cut up the ingredients (tomatillos, onion, jalapeno, garlic) and sent me out back to get a grill lit. 


Ready for action!

Giving everything a bit of a char.


Cooked down and into the blender with some chicken stock to smooth it out.


All Pau!

Nice cook. I love using left over roti chicken for my enchiladas. I like to return them to the grill to finish the cook and impart some smome flavor to the cheese and whole dish.

Wow Ink! Yours look great! I normally put mine back in the grill as well but my wife wanted the oven for these. (they weren't as good) hahaha!

I grill tomatillos all the time to make tomatillo sauce, which I suppose is salsa verde. So last week I picked a bounty of them from the garden and grill roasted them. On the blend I tossed in some crema and an avocado in the mix.  Maybe a handful of cilantro. Omg. Ascend directly to heaven. We were fighting over that sauce. I had grilled some chicken, pork and shrimp skewers and made some green chile and cilantro rice. After I tasted it, I kept telling my kids and the Honeybun it was "terrible" in the hopes they would leave it and go make a PBJ but the look of rapture on my face gave me away.

@Bubblehead, I forgot to add the instruction. Blitz in blender or cuisinart. Season to taste. Once your eyes stop rolling in the back of your head, quickly snarf it all with a spoon, clear the evidence and deny, deny, deny. :)

I use it for chicken and pork all the time.  Not sure if it's "correct" or not but it's pretty tasty!
