Made chicken tonight and used my coal holders in the center for indirect cooking. Just as good as a vortex would be. Happy with results and it smells pretty good.

Some good looking chicken. That's how I do it. Works perfect.

@clarissa -  I use baskets instead of my Vortex from time to time with good results, but about twice as much charcoal in the baskets as you used.  How long did they take?  You're making me hungry for some chicken thighs tonight!!!!

I debated about using a full vs 3/4 full chimney. Went with less to conserve. The thighs cooked for 1.5 hrs.  Put my center grate in and heated up some beans. All came out well.  My guys are happy campers.

In some places, that's considered sacrilege...  :)
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

I'm still 50/50 Vortex vs. SnS.  Depends on how many wings and what sides I'm cooking.

But there's nothing wrong with what you're doing, @clarissa.  Looks like you got some good, crispy skin on those.

Lots of ways to try to replicate the Vortex but none of the are what the Vortex is...

That said...Those are some fine looking poultry parts...Great job...

I have considered getting one, but truthfully for the limited needs of my family grill wise, this method will be fine. I love, however, seeing what other grillers do with their vortex. It is an amazing accessory.

Well, I only find it useful for wings in the circle.
But when I make wings on the grill the whole family wants them sweet. Sweet wings don't work well with high heat.

Okay folks - I give in! What the heck is a vortex - I guess it's nothing to do with fluid dynamics. Then I spy this, "I'm still 50/50 Vortex vs. SnS". My brain 'hurts!!!

it's a metal cone, like the ones dogs wear when you need them to stop licking their nuts or chewing their tail off - except it's metal.
it's useful for making a single very hot spot, or for making a ring of hot and indirect heat. There are claims to other methods of use, but after multiple attempts I am convinced that the other usage methods are a waste of time.

The SNS is the Slow'n Sear. There's no comparing. Vortex is a one trick pony that is easily replicated.
SNS is an accessory that lives in the grill and improves the function of the grill, even in multiple cooking arrangements and methods.

Sorry @Efkay, my fault.  It is as Troy stated.
