Those Kettle Pizza things really work !!!!  (more in a minute)

Been getting more back to grilling/smoking as of late, after having to really knuckle down & re-learn my trade of 45 years.....working with much different machinery than I ever did before....took a lot of concentration & has really soaked the energy for other pursuits (like being here & having something to contribute !!) out of, yes, getting somewhat older, but not much wiser, me.... ;D

Anyways....

First....lipstick on a pig....

I got this older Patent # Redhead, semi-crumpled lid lip, a few dings, that somehow ended up with stainless sweeps when I re-did 6 of them in one day awhile back....thing's a beast.....holds temp great & shuts down pretty tight to save coal....needed some handles...

Brian to the rescue, once again....

Quite possibly plum wood from the Japanese plum that grew for decades & died in this yard right after I moved here in 2000...

Things have been strewn about & lost track of here @ the Kettle Orphanage, esp. after the tremendously violent winter we had (read 134% of the avg. annual rainfall in about 6 weeks during Jan./ Feb.), but....I found the MacGyver Upper Deck Smoking Rack ....so happy!!!!

(^^^this, coincidentally, is the last picture I got of Molly Malone....doing what she loved: sitting up on her little grass area, watching Papa BBQ....not too long after this, she injured herself playing too hard & was not able to recover :'()

Burned off the grate to clean it up & then did an injected tri-tip...

(dish soap not in injection.)

Saved the strained material from the bottle marinades to use as a 'wet rub'....

Sear 1st, ask questions later....

Droop test on the slice....

So.....fast forward to today.....

I started of to do ribs with a double chain setup in the Redhead.....

& the wife sez: "I''m hungry" (which means in wifespeak: "I ain't waitin' 4-1/2 hours for the ribs.....")
So....what do you want dear?  Pizza?   Yeah, but I don't want to heat up the house.....
It's OK, I'll just do it outside !!!

1) Jump the coal chains into Bob (trusty 3-wheeler), right next door...
2) Assemble KettlePizza in record time...
3) Fire off some lump....
4) Race up & pick up Murphy's medium & some cookie dough....
5) Set on ribs while pizza Kettle rises in temp....
6) Check temp & start pie @ about 525f.....
7) Finish pie in 8 minutes to quell the wife's food anxiety.....
8 ) Fire more coals as the ribs aren't quite off to a clean start...
9) Do up choc chip cookies.....
10) Let ribs wander thru the cookup in the fashion I originally intended, semi-long & low cook....

!)

Held on low heat in foil, not a tight wrap....

Dang, that Kettle Pizza thing worked pretty good....set some coals against the back & a few right under....added just one piece of Coastal Red Oak, a hot burning wood & even a Murphy's came out grate!!

Tri tip and ribs look great!  Fine looking pizza!  I have the same laser thermo you have and am still learning how to use it.  How did you calibrate it for use with the pizza oven?

@MrHoss
Thanks Hoss.....gave me a chuckle there ..... ;D

@dazzo
Thx Rick....we had it at a little dive in downtown years ago, then found it at stores....never without now !!!

@Winz
Thanks man....just practicin' up for the real thing..... 8)

@Davescprktl
I've not done really anything as far as calibration....was I supposed to?
Just used it as is out of the box, add batteries & go.....I just aimed at the edge of the pizza stone, next to the pie & watched it every 90 seconds or so until it got up in cook range, or so I thought (in my un-calibrated way of thinking)

@jcnaz
Recent studies show that men think about searing & capturing meat's juices some 5-1/2 hours per day....or something like that.... :o

@Canadian Bacon
Yeah, CB....I thought sure I'd goon out on the 1st pie I ever did like this....done plenty of little personal size ones right on the grate @ 400f or so, but this "oven" thing is a different ballgame....
..now to get going on making up dough & figuring out "added extras" for the toppings.... 8)

@HoosierKettle
Wonder how much overnite UPS would be for a 3-1/2 lb'er?

@Heyjude
Thx AJ....I got the wife up out of her depressed state over her & out looking for a new little sister for Bruno...trouble is, he creates such a stir when we take him to the SPCA for a meet 'n' greet that we can't get the situation calmed down enough for him to make friends....he just visits everywhere...the other dawgs, inside the front office cubicle...down the halls....it's a fun mess.... :o

@Troy

Thx man...don't know about epic, but it tastes good !!!

Trying to make more time to be here, esp. with Can. Bacon & jeepdad & Tony & others showing up.....things are gettin' special.....lot of very new folks coming by also.... ;D
