German Pretzels

This is a recipe and photos posted on the Facebook page Weber Kettle Fans. It was posted by "grillgal"  Sonia Harvy of Australia. Maybe some of you have already done this but thought I would pass this along if anyone is adventuresome. Might have to attempt this.

Pretzel recipe
1 kilo bread flour
40 grams malt ( can substitute sugar)
70 grams butter
22 grams salt
14 grams dried yeast
470 grams water


I just mix all of the ingredients into a firm ball for about 10 minutes, let rise covered till dough doubles in size. Shape and let them rise covered for 20/30 minutes. Then put them into the fridge for one hour uncovered. While in the fridge they will form a skin and go hard and this makes them easier to handle when dipping. Remove from fridge and dip into lye bath and bake at 200 degrees c for 20-25 minutes, till golden brown and sound hollow when tapped.  I just set the kettle up for indirect cooking with pizza stones in the middle. Heated stones for 30 minutes and kept the temp at 200 deg c and baked for 25 mins.

Lye 1 liter COLD WATER add 35 grams of food grade caustic soda and stir till dissolved in a GLASS BOWL

Warning caustic soda is dangerous if not handled correctly!!!! You could always do a baking soda bath like bagels. They won't have the deep colour or flavour of lye but still a nice pretzel 👍

Ok. Anyone want to try this?? I would.
I saw this too, commented and just thought how cool and out of the box kind of grilling is this!
Here's a thought. After the super bowl (feb 5) is done, anyone who wants to try this, comment on this post that you're in. Then, let's say the following weekend we all post our efforts of making a pretzel. That would be feb 12 and gives us all a week to get ingredients, and make something happen.
Doesn't mean you have to make it and post on the 12. Just post it on the 12. Just for fun.
If that's something that we would like to try, tag someone in and let's see who we can get involved.

I can't seem to track down the original post, but my bride has a baker friend. I can get a list of ingredients to post or substitutes. Careful with the lye, right... [emoji33]

I just bought my caustic soda on Amazon... stuff is cheap but man, the shipping is killer!
