Double Loaves

I've seen others do this here and on several other BBQ forums and thought that it was time to give it a try.

Meatloaf mix:

3½ lbs. ground beef
2 lbs. sweet Italian sausage
Salt/pepper to taste
1 Tbsp granulated garlic
1 cup finely chopped onion
1 cup finely chopped bell pepper (I used some yellow this time)
5 eggs
Enough bread crumbs to pull it together-about 1½ cups

Split the mixture in half and form out two loaves.  Refrigerate for one hour.



I set up the Slow 'n Sear with some hickory chunks to add flavor.



Here we about an hour into it.  The loaves were at 100º and Kahuna was running at about 285º or so.



Here they area after two hours in Kahuna.  ITs were just over and under 150º.  I packed 'em up for the trip over to my folks house.



When I got to my parents' house, I was distracted by my younger grandson (just turned a year) who had discovered walking for the first time.  By the time I got the loaves into a 400º oven, the ITs had dropped about 20º.  It took about an hour for the loaves to get up to 160º.  About halfway through, I put a couple of trays of Tater Tots.

Looks very good. Did using hickory make the beef taste like it was wrapped in bacon? I love it when that happens.

Hey @MrHoss, I used a combination of mesquite and cherry, but will try hickory next time I do it.  Thanks for the tip!
