Lumpy Coal

The turkey is spinning! 

I started yesterday by picking up this beauty fresh 15 lbs free range locally grown yada yada turkey.  Brined overnight using the apple brine recipe on weber's website...it's my goto brine.  Let it dry on a plate in the fridge for an hour before spitting it.  After spitting, I let it warm up a bit on the counter except for putting the breasts on ice. 

I also set up the lump in a u shaped pattern around the drip pan using baskets and a foil pan. 

Not using any wood for smoke wanting a good not very smokey gravy.

Closing in on doneness.  Progressing well for sure.  I've allowed the coals on the end to die down as that end of the turkey was really darkening up.  I've also added foil heat deflectors to slow the overall darkening.

It was tasty and juicy. 

What I would do differently next time....

1. Don't think I'd ice the breasts and put coals on the end too. I'd just do one ore the other.  Got a bit darker then we like. 

2. Might try a good briquette so as to have a lower heat intensity coming from the coals.  Hopefully this will help achieve a nice golden turkey. 

3. Forgot to put apple and onion inside the turkey until after I spit it...I think this would of added the flavor I was looking for better.

That looks great!  I have been wanting to try this myself.  Did you have any problems getting the rotisserie to spin the bird?

I tell you, I have been doing turkey on the grill, roto and other ways and this past Saturday I had a turkey cooked in a roaster pan, I forgot how much better  turkey on the grill is oven other indoor methods.
I am not a collector, but I do have a small collection.

Nice cook! If you want a golden turkey rub some butter/fat/lard on the outside of it right before you cook it. I've observed that the best colored turkeys that get posted here have been rubbed with fat.

My wife did say she prefers the colour and taste of the turkey I did on the kettle,  in a pan like Jamie Perviance did the apple brined turkey.  But she thought rototurkey was good too.  I think she's getting spoiled.   I find it easier to cook it more evenly on the roti though.
