Chicken Thighs and Cherry Betty

Its Sunday supper time.  Wanted to try a "1 kettle" full meal: entree, sides, and desert all cooked at the same time using a 22.5 kettle.


Preparing chicken thighs.  I stopped seasoning the outside of the pieces because I believe the flame and heat just destroys the rub.  Instead, I peeled back the skin and seasoned liberally with rub and then fold the skin back over to protect the rub.  About 15 minutes before they are done, I start painting them with good bbq sauce.





Sweet potato covered with olive oil, kosher salt, and pepper and then wrapped in foil.  These thin potatoes cook faster, allowing them to be ready when everything else is:

Chicken thighs searing directly over a chimney of lump.  Potato is on, green chile cornbread and cherry betty on deck:





It got a bit crowded when everything had to move to the indirect side:





The payoff:  BBQ chicken thighs, sweet potato, green chile cornbread, and cherry betty all cooked at the same time on a single 22.5" grill.  Washed it down with a nice German selection:

I wanted a copper ashcan.  Rather than paint the existing one, I found a copper pan that has the same diameter as a Weber unit.  I simply modified it to accept the Weber ashcan handle.

It is an end-grain walnut block.  I had it made by a company called Kobi.  You can specify the dimensions, orientation, and type of wood you want, and they will make it for you.  Mine is 18" x 24" x 1.5".  Gives me plenty of space to work.

Impressive cook! The cherry dessert looks awesome. I like that beer too, I'll grab it when it goes, on sale.
