Stella's First Ever Cook

604 picked up this ER code Blue MT that had been assembled but never used. He passed it along to me and today is the day I break her cherry:





I have had this Kettle in my man room admiring it, knowing I would one day cook on her:





I am doing side ribs today with MacEggs in mind. Thin layer of grape seed oil followed by S+P on the backsides and rub on top...in this case Dizzy Dust. I am going with a higher than normal cooking temp....320f or so. Wood is a mix of cherry and Scotch chunks. No foiling:

My nemesis is ribs. Not that I haven't nailed them before....I just can't do them consistently. These were very good...room for improvement still....but if I could do them like this every time I'd be happy.

Nice ending right there.......they don't always go off just exactly perfect, but over time, more & more will be "just right", eh what?

Hoss - Stella looks fantastic with those dark wood handles.  Very classy.


And the ribs - not sure what to improve there, they look perfect to me.  The "bend test" says it all.

I love the name Stella. It could also describe the food coming off the kettle you are in Boston (Stell-ah=Stellar). Get it? Sorry, I am lame. lol. What do you hope to improve on?
