Cedar Salmon and Pasta

I scored some Cedar planks at Costco for a great price, and fresh Copper river Salmon was on sale at the store.  I also wanted to try out some new lump.


The new charcoal.  Gets good reviews at the Naked Whiz:





Norma Jean gets the call.  I realize I have not cooked enough on this kettle.  Time to remedy that:





Salmon on cedar.  Light dressing of olive oil and a dry rub that is more on the sweet side:





I love it when she gets all hot and bothered.  I am convinced that you need @pbe gummi bear type photo skills to capture the color change.  It is so much more apparent in person than this picture shows.  The whole kettle turns a light orange color:





I was determined to use the kettle to cook the pasta as well.  I could not maintain a "rolling boil", but with fresh pasta all you really need is hot water.  My sous chef was not much help - until it was time to eat...





The payoff:





If you have never tried a cedar plank I highly recommend it.  Soak in water for an hour, and put it directly over the fire.  It prevents the fish from burning, but more importantly, it really imparts a nice taste to the food. 


I have a nice porterhouse on deck for this week and am going to give it a "cedar plank, reverse sear" attempt to see if I can get the same effect with beef.

Cedar planked salmon usually rocks my world ..... But, on a yeller would knock me off the plank ... so to speak ...

Nice scenery, but I do miss that beauty NorCal scene that you displayed so well. .......  You liking AZ??   8) 8) ;D 8) 8)

Hey Mac.  I do miss the Sierras very much.  That said, I live at the base of the Superstition mountains in AZ.  The desert can be a very beautiful place.

Hi Nate.  Never even turned it on.  With 300 lbs of charcoal in the garage, I don't plan to use it soon,  although it does have a roti that might come in handy....

Suhweeeeet!  Salmon is my freakin' favorite ...
I made some last night, haven't seen the cedar planks at Costco this year (must be hiding).
I've been using pecan chips and they give a great flavor.
