Another Pork Steak

Friday morning 7 a.m. - down to the freezer to find something to cook for dinner .... TA DA Pork Steak!
Let it defrost all day and decided to do this a little different.  @addicted-to-smoke is off traveling so I was on my own.....

Spent a few hours going thru everything I could find and came up with a modified version of many. 

I set up the 22.5 OTG for a snake burn at 300 and used cherry wood for smoke. 
I rubbed it down with a modified version of Jeff Phillips's Rub:
• 2-1/2 TBS Coarse Black Pepper
• 1 tsp Chili Powder
• 1-1/2 TBS Garlic Powder
• 1-1/2 TBS Onion Powder
• 1 TBS Kosher Salt



Once the Weber hit 300 steady - on it went with some sweets


After 1.5 hours I Pulled it off for stage 2.  (I love the way the foil turns gold!! ;D)


Stage 2 has it wrapped it in foil with some butter and brown sugar! ;) I put a layer of the sugar on the foil then the steak and then more sugar and butter.



That stayed on for 1 hour - I had to keep telling my self "Trust in the Force, Chuck"

Stage 3 is the final - open the foil and let it go for another 30 mins ..... At this time I did my 1st temp check and it was 183... I thought maybe I should just pull it now ..... "Trust in the Force, Chuck"  Back on it went!! 


Man my timer hit 30 mins and I pulled it off to rest for 15 mins ..... couldn't wait any longer
I cut it......


.......and ate it


My wife had some major dental work done a few days ago and she still hurt.... I was surprised at how much she ate.... "I ate thru the pain ... it was just too good!", she said.   
That is all I need to hear!!   :)

That looks like a modified "3-2-1" like we just did? You come up with all that hoi paloi yourself? Looks good.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

I know, @addicted-to-smoke, I was thinking of that when I did it .... was part of the inspiration.... take what we've learned and add to it!!

and ....as you know - I never do anything myself ..... the Smart one of this house was with me and helping with her thoughts!   Good thing too.

Cook up looks delicious Chuck! And those backed sweet potatoes look like the perfect compliment. Very nice!
