Hot sauce recipe

Anyone got a good recipe? I just picked up a decent amount of scotch bonnets, Serranos, and long hot peppers. Flavor is the most important thing to me. I love a really hot sauce, but it must be flavorful.

Also have plenty of garlic, onions, and carrots around to add to the sauce.

It's really simple... Use white vinegar, a few cloves of garlic, a little bit of salt and a little sugar to taste. Put all the peppers, garlic, onions, carrots, etc., in a blender, add vinegar , salt, and sugar (I used 1TBS each for a large mason jar) to desired thickness, and put in a mason jar.

I haven't done this as I didn't have a smoker at the time, but smoke the peppers, onions, garlic, etc., before blending and adding vinegar.

I have used the following recipe and I love it.
I usually double the recipe, and use about 12 peppers.  I also use a few more garlic cloves than what is originally called for.

Thanks Mac, I switched a few things up, but used that as my base. Got some good kick. Can't wIt for it to sit for a few days.

That particular recipe calls for water and vinegar. 

I don't use them, instead I substitute with the brine from my homemade pickled hot peppers.  Better flavour, plus some added kick.

I have given samples to some friends and family, and they really like it.  They say it's hot, but that's the way I like it.

what kind of hot sauce are you looking for?

don't mean to sound flippant, but, it's a serious question.

there are many uses of hot sauce and each use has several varities of flavors.

The one Mac gave me is a winner, should have said I was looking for an all around hot sauce. Something I could put on anything.

Mac, I said that to my wife last night, should take my brine from my dill pickles and see how it turns out.

How long does homemade hot sauce last?

Since it has a high acid content I would think a decent amount of time. Also, if you boil it and can it, I would think even longer.

depends on the ingredients and how you bottle it

vinegar based sauces are going last longer than water based
plus using some form of canning method to bottle helps self life

I like the recipe linked to, the carrots will give it a nice taste
