Hi All,

Here is my take on some sweet steak fajitas. These really hit the spot and disappeared in no time! If they sound even remotely appetizing to you, give them a shot! Super easy, fun to make and delicious...

I dusted both sides of the stir fry meat with Winz' sweet rub and let it soak in while I chopped up all the veggies and got the performer fired up:

Ingredients:

- Stir fry beef
- Red and Yellow Peppers
- Fresh Ginger
- Carrots
- Sweet Onion
- Honey Hoisin Sauce
- @Winz' Honey Rub
- Flour Tortillas
- Mexican Taco Cheese
- Rice (I used Basmati)

Veggies and Ginger ready to go. Slivers of carrots, not chunks, highly recommended ;):

Today's weapon of choice - the trusty Copper Performer. It's miserable and raining today so I am huddled under the eaves trough overhang. :o

Weber Gourmet System Wok:

Now up to temp - time for the meat and onions to hit the wok:

SssSSSssSssssSSsssssteaming up nicely...:

Rest of the veggies added to the mix:

Time for the Honey Hoisin Stir Fry Sauce:

And here's the money shot(s)!

These were some of the best fajitas I've ever had! The Honey, Hoisin, Ginger and Carrots were a great match and along with the rice and veggies had the perfect amount of flavour.

...You know its good when the wife is hiding the leftovers so she has enough for her lunch the next day! :D

Thanks for looking!

I've had a lot of fajitas and those look better than most and probably taste even better. Great looking grub, wish I had a plateful right now.

Nice use of the Wok!  I bet that Copper SS performer makes the food taste extra good as well.

Honey Hoisin for fajitas = great idea.

Interesting.  I thought that copper is meant for salmon and redhead for beef.  That's really mixing things up.

I thought that this was how we are supposed to use these:
Red: Beef/Pork
Blue: Tuna/Rare Beef
Copper: Salmon, esp. from Copper River
Green: Veggies
Plum: Fruit
Lime: Anything with a citrus marinade
Yellow:Poultry/Curry
Brownie: Misc, anything that isn't covered by the other colors
Black: Cajun/Blackened anything, cowboy steaks
'cado: Tofu & Meat substitutes
Simpsons: Hot dogs & Burgers
Beer Branded: Brats and sausages
Westerner: Beef/Game[/size]

Do I have it all wrong?

Don't know about any rules by color. My rule is grab your favorite color of the day and grill whatever you want. It's worked so far. Not much of a conformity guy anyway.

question, how do you slice your carrots like that?

It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

Fantastic use of the wok! I need to do fajitas again soon employing my wok. Nice job!

A sharp, stiff knife will do it, or you can probably buy them already julienned, https://www.google.com/search?client=safari&rls=en&q=julienned+carrots&ie=UTF-8&oe=UTF-8

This is a good video showing the technique:

My chopping skills are shotty so it took me probably 5 times as long :)
