Memorial Day Ribs (in the snow)

We got around 5 inches of snow last night, so they closed down work and declared today a "holiday" that we will have to make up on Memorial Day.
So if it's Memorial Day, why not treat it like such? Time to bust out the grill!

Tried Meathead's recipe for "Last Meal Ribs" from amazingribs.com
Here they are going on. I used some left over coshell, put a few fresh ones on top, and lit about 15 in the chimney. Poured the lit on top with some apple and hickory chunks.

After about twenty minutes shut the bottom vents down to just barley open and the temp stabilized right at 250.
About 5 hours later 

Meathead suggests brushing sauce on them and then putting them over the coals to crisp up the sauce. I did it with half the rack, because I usually brush sauce on while I eat them. Plus I wanted to try the ribs naked with just his rub.

Back inside the ones that got "grilled" are on top. I wound up putting sauce on all of them after trying some naked, and can't say I noticed much of a difference between the ones that grilled and just got the sauce brushed on them.

And the obligatory bite shot...

Good ribs, I liked his rub. He suggests not putting salt in your rubs and salting the meat independently before you rub.   
One thing I did miss was my mop. I usually mop my ribs with a vinegar sauce while they cook, and I think that would have added a nice extra level of flavor.
All in all, good ribs

Looks gooooood.

I think some sauces are "activated" by heat.  Heat does something to the flavor by caramelizing sugars or burning off a little vinegar.
Cattleman's and Sweet Baby Ray's are two I really like after a good bubble.

Looks grate! Nice cook...but I dont see any cold beer in there to go along with the Memorial Day festivities.
