Today I also tried out my Craigslist Cajun Bandit Roti. First up are a couple of brined chickens.









Then, we put on a little cinnamon/sugar pineapple.

Great looking cook. The roti is must fit like a glove. You hardly used any charcoal.

Nice roto cooks. I bet that pineapple was AWSOME.

Everything was grate!

For the pineapple, I brushed on a cinnamon sugar before putting it on the spit. I only cooked it for 20 minutes. Next time I will go 30 minutes so I can get the core nice and tender. About halfway through, I brushed melted butter on it and added a little more cinnamon sugar.

Pineapple on the roti is a beauty idea. Good to see you putting that rig to use quick.

@mrhoss Yeah, we have had it at various Brazilian Steak Houses and certainly wanted to try it. It was not disappointing at all.
