Pulled Pork Tacos

I pulled this out of the freezer thinking it was a pork loin my mom gave me. Turns out it was a 4lb hunk of bone-in pork shoulder. I wanted to do something a bit different this time, so I used Webers "Kickin Chicken" for the rub. Pulled pork tacos is the plan! Oh, I'm also trying out the Ivation unit I got for Christmas for the first time.


There are about 100 unlit in there, with some Apricot chunks from a tree in our yard. First time using this wood.

I added 10 lit to get the cook started.

I'll add some more pics as the cook progresses.

Fire roasted salsa for the tacos.

Working in a bit of rain today.

About 5.5 hours into the cook, right at 180 degrees.

That looks really good. Has a nice bark to it.

This took about 7.5 hours, from start to finish at 250, on the mini.

The salsa was well worth the effort and a nice addition to the tacos.
