After recently taking delivery of my new, much bigger Yoder smoker (or oven as Golly would call it) I have been trying to give my Weber's some love lately!

We have an abundance of Rangers Valley MBS 7+ F1 Wagyu scotch (due to an oversight in order quantity lol)

So I have been playing with that whilst my son is staying with us over the xmas break.

Last night we had it with a light dust of Tatonka dust and grilled over charcoal on the Weber Kettle.

First fire in a while for this ole friend!

Yeah, I know its filthy.. but I like it that way!  :o  the wood chips are hickory, I throw some on the fire for flavour!

Here's a weber kettle rollin coal...  ;D

Plated

Perfect!

Over the past weekend I decided to rescue the flat top from the Genesis!

Before

After:

Because I wanted to cook these bad boys teppnayaki style.

Crust!

Plated and served with grilled Silken Tofu and a Korean shallot salad.

Both great ways to cook this gorgeous steak, but hands down the kettle done the best job on it! the result is much like my Hibachi grill.

Enjoy  8)

Thank you gents! We're quite fortunate in Sydney to get a good range of premium beef... the same cannot be said about our supermarket grade of beef.. its rubbish!
