Boned out two 6+lb Turkey breasts.

Butterflied and flattened them between plastic wrap, then layered with Herb stuffing mix, Craisins and chopped Pecans.

Rolled up and covered the top with skin, wrapped in cheese cloth, then trussed up with butcher twine.

Slathered each roll with a cube of BUTTER!

Cooked for 1.5 hours at 350* on the Pellet Pro 22" WSM

First time making these and they were a big hit! Definitely worth the effort.

Enjoy!

That looks REALLY good! Nice job swamp!

I love sneaking Craisins into pork tenderloins - have you tried the blueberry infused ones? Definitely worth checking out ;)

Beautiful cook. Thanks for sharing. My wife just brought home 3 turkeys. Now I know what to do with them.
