Beef, Chicken, and Smoked Sausage Fajitas!

My dad called me last night and said that he had purchased a English Shoulder Roast to put in the crock-pot for supper tonight but asked if I thought I could do fajitas with it instead. I had never done fajitas with a roast and he had found a recipe for shredded beef tacos but I thought it would be better grilled so after some research this is what I came up with.

I sliced the roast in half so it would not be as thick as it was in the package. Then it was marinated in the following for approx 1.5 hours:

1.5 cups of Pineapple Juice
1.5 cups of Soy Sauce
2 tbs of Lime Juice
2 Cloves of Minced Garlic

After it came out of the marinade it was seasoned with McCormick Fajita seasoning. I then filled a Weber Chimney full of KBB and separated it between two charcoal baskets on dad's 26".



Dad also decided to throw on some smoked sausage!



After the beef reached 130F it was pulled along with the chicken when it was finished. They were covered and allowed to rest for 5-10 mins then sliced.











Onion and bell pepper in the cast iron skillet.



Then heated the tortillas wrapped in foil in the oven at 350F for 15 mins. Pile on your favorite combination and talk about some good eating!
