Happy Canadian Thanksgiving - What better time then to smoke...

...some ribs!? :o

We had a big turkey dinner last night at my parents place so decided to mix it up a little bit for tonight's meal when we have more family over for round two  ;D

4 Racks of backs hit the WSM at 11:30 this AM - Two of which were doctor'd up using @jamesnomore 's O'Brien Rub  8) Definitely looking forward to testing that out - and the other two racks are coated with BRITU and Prairie Smoke and Spice Rib Rub for some Canadian flavour.









More to come but in the meantime Happy Thanksgiving to all members from the Great White North ;)

Ribs look good. I also roll the full racks on my 18 wsm
If you don't the end of the rack close to the edges get over done.

I suppose it's more of a habit from my mini-wsm days, but I find skewered the racks are also easier to handle and move around if needed. Never had any cooking issues this way either - the ribs always come out great  8) I just remove the skewer as soon as they come off smoker, then stretch them out flat on tinfoil so that gravity slowly stretches them out straight again. By the time you sauce them they look like they laid flat right from the start.

The 18 WSM is such a perfect size, at least for me! Half the time the lower rack is empty in my 18" so I couldn't justify a 22" ... at least yet ;)

Looks great so far 604.  As per the addition of a 22 WSM....."justification"........we don't need no stinkin' justification.  Never have, never will.  Not us. Not for another Weber.

What a wonderful night! The ribs turned out great and the whole family loved the meal! My wife made some killer white cheddar potatoes to go along with the smoked baked beans (definitely my most successful go at beans - so good!) Sorry no fancy plated pic this time - we were all starving and just dove in. Lot's of empty bones lying around that's for sure.  8)

Forgot to mentioned that I used Pecan wood for only the second time tonight along with some apple and the smell while smoking was just awesome. Real nice flavour in the end - if you haven't tried it before give it a go!

Looks great 604! I have never rolled or did the hang method. Always something to try on a Weber!
