This will be a slow as molasses cook blog :)

Prep... I'm finally taking another go at turds today! I will be drawing on inspiration and strength from sir @1buckie - going with the fire roasted garlic sausage, cream cheese and the tandoori spice ;) 8)



Going to fire up the WSM - more to follow throughout the day...

;) na that's just on the counter for use in the WSM water pan 8)

Btw what are your thoughts on using juice etc in the water pan with a pork butt? Any difference or is it a waste of time since it's already so fatty and moist?

I do make beans fairly often and love them! but for some reason I have yet to really hit a home run with pulled pork :-\ so I figured I would try experimenting with other methods a bit. This time I dialed the temp down and gave myself a lot of extra time. Normally I just use water or nothing in the pan but figured I would try the AJ etc to see if I can get it more moist. I think my main problem on previous attempts was not letting it rest long enough.

OK, so the turds were really good!! but I am still baffled by one thing... 5 of the 8 turds were just "regular" but the other 3 were like inferno hot. I like me some spicy food but this was make me sweat under the eyes and down some milk hot! AND it's happened both times I have attempted them.

Is there normally that much variance in heat from one pepper to the next??

In my experience, yes Matt. You never know what you'll get with the peppers, even after removing seeds and ribs.
Not everyone deserves to know the real you. Let them criticize who they think you are.
